Ayurvedic Nutrition and Cooking Certification Course

August 22 – 29, 2010


This seven day intensive course is designed to give the student a sound understanding of the Ayurvedic nutrition and food combinations that empower health and digestion. Students will learn how to plan well balanced, nutritious vegetarian meal made from grains, beans, vegetables, fruits, seeds, dairy products, fat, spices and herbs, based on Ayurvedic principles.    .


Ayurveda, a traditional, holistic, natural healing science of health from India, has been practiced for over 5,000 years and teaches us how to live a healthy, balanced life. Ayurveda emphasizes diet as the most essential part of a healthy life.
This course is open to every one including yoga teachers, yoga practitioners; those who want to become healthy vegetarians and would like to learn about balanced food according to the principles of Ayurveda.

Dr Sonal Bhatt
Dr. Sonal Bhatt M.D. (Ayurveda), B.A.M.S. (Bachelor of Ayurvedic Medicine and Surgery), is a highly qualified Ayurvedic physician and Panchkarma specialist from one of the leading Ayurvedic universities in India, Jamnagar Ayurvedic University. She is also a Registered Holistic Nutritional Consultant from CSNN Toronto.

Dr. Bhatt has been practicing as an Ayurvedic consultant, Panchkarma specialist, teacher and researcher in India, Canada and North America for over 20 years. She has been invited to many famous institutions as an expert on subjects including Ayurvedic nutrition, Panchkarma therapy, diabetes, and stress management. She is a life member of the All-India Ayurvedic Congress and Gujarat Ayurvedic Congress, and was a regular invitee as Ayurvedic doctor on All-India Radio.  She is currently practicing and teaching in Ayurveda and offering holistic health services in Toronto.

Graduates of the course will receive a certificate of successful completion by Ayurvedic Dr Sonal Bhatt and the Sivananda Yoga Vedanta Centre.
Course overview
  • Introduction to the basic principles of Ayurveda
  • Determine your own body type with tridosha theory
  • Introduction to Dincharya (daily schedule)
  • A balanced diet according to Ayurveda
  • The twelve Ayurvedic food groups
  • Sources and  balance of the six tastes (shad rasa): sweet, sour, salty, bitter, astringent, pungent  
  • Food combinations using Ayurvedic principles
  • Proper preparation of vegetarian proteins for the maintenance of essential protein in diet
  • Use of Ayurvedic herbs and spices to enhance the digestive process
  • Planning well balanced, nutritious meals

Cooking workshops overview
•    Menu will cover Tri-Dosha receipes for all body types
•    Recipes to be cooked with therapeutic herbs and spices
•    Proper food combinations used to enhance the digestion
•    Preparation of nutritious sweets
•    Preparation of healthy hot and cold drinks
•    Hands on cooking with Ayurvedic care and guidance

 

 

August 22      Arrival day and introduction at 7:30-8pm

Daily schedule from August 23 to 28

5:30am         Wake up
6:00am         Satsang (meditation, yoga, and talk on yoga philosophy)
8am             Yoga and pranayama class
10am           Brunch
11am           Karma yoga (one hour of selfless service compulsory)
12-1:30pm    Ayurvedic lecture
2-5pm          Ayurvedic cooking workshop
5-6pm          Kitchen clean-up
6pm            Dinner
8pm            Satsang with cultural program
10pm           Lights out

August 29    Course test, graduation, and departure

The course will start at 7.30 pm on August 22 and will finish at 5.00 pm on August 29
